I’m prepping today. Lots of chopping, baking, marinating, etc. I have been lazy lately and have been relying on take out, eating out and veggie burgers so I’m spending an hour or so in the kitchen.
I like to have a lot of things on hand so I can throw them into a bowl and be good to go. In fact, bowls are a great option for families that are in, out and heading to activities.
- Brown rice, topped with beans, salsa and some cooked spinach? Si! Ole!
- Pasta tossed with steamed broccoli florets, chopped tomatoes and a drizzle of olive oil? Mangia! Mangia!
- Soba noodles, chopped cabbage, radishes, tofu or other protein, cilantro, with a splash of ginger-soy dressing? Hai!
- A green salad with quionoa, roasted potatoes, garbanzo beans and a balsamic dressing? Hell yes!
