This is my new favorite bowl recipe. What I LOVE is that you can take this basic recipe and modify it however you like. Use spinach instead of kale, zoodles instead of the soba noodles, add carrots, red bell peppers or shredded red cabbage.
And if you have carnivores in your family that resist the beauty of this plant-based meal, you can also top it with chicken or prawns. It’s their arteries. Ha. Ha. Plant-based humor.
