What’s for Dinner?

Today I’m going to share with you one of my FAVORITE salads!

It’s perfect for summer.  It’s also super fast to make.  Winner, Winner…Kale Dinner!

Yes Yes Yes Salad

The Engine 2 Seven-Day Rescue Diet Cookbook

Ingredients

2 cups kale leaves, chopped into thin, fine strips
½ Napa cabbage, chopped into thin, fine strips
¼ cup walnuts
1 avocado (mashed or cubed)
1 tsp lemon juice
½ tsp Salt, ½ tsp pepper, garlic powder to taste

Dressing of choice ( I like the 3-2-1 Dressing.  See below for recipe)

Instructions

  • Combine kale and cabbage in bowl
  • Place walnuts in a dry skillet (no oil or liquid) on medium heat and toast for 3-5 minutes, set aside
  • Combine avocado and lemon juice in a small bowl, season with salt, pepper and garlic powder; once combined add to the kale and cabbage and massage or use a spoon to mix thoroughly
  • Sprinkle walnuts on top
  • Add dressing

 3-2-1 Dressing

The Engine 2 Seven-Day Rescue Diet Cookbook

Ingredients
3 T vinegar of choice (balsamic, red wine, rice, apple cider)
2 T mustard
1 T pure maple syrup
1 T lemon juice

Instructions

  • Whisk the ingredients together, add any seasonings such as garlic powder, chopped garlic, salt, pepper, red pepper flakes, as you like

      For this salad in particular, I don’t because of the fat in the avocado. 🙂 But you could always add a tsp or more if you like.
