Brunching

I found this amazing recipe on Thug Kitchen’s Instagram feed last week and decided I had to bring it to an upcoming potluck.   (www.thugkitchen.com) Now, full disclosure,  I’m skeptical on vegan sweet dishes because they don’t always work out for me but this was a hit!

I mean who doesn’t like french toast??  And you won’t miss the butter, eggs or milk, I promise!

Prior to serving I drizzled  just a bit more maple syrup on top and dusted it with powdered sugar.

It looked pretty and the extra sweetness was just right and not too much.

I’ll be adding this to my brunch repertoire and will be making it again for Christmas morning.  It will go nicely with my Christmas morning Mimosa.
