Snack Attack

It’s 4 pm and you’re hungry.  It’s close to dinner so you just need a little healthy snack to tide you over for a few hours until dinner.  What’s a girl to do?

Lucky for you I’m an experienced late afternoon snacker so if you’ll indulge me, here are my top 5 snack picks.

Boiled Baby Potatoes
Boil a bag of baby potatoes (white, red or the baby gold yukons) in water until just fork tender.  Don’t cook them to mush.  Drain the water, dry them off, sprinkle with a salt-free spice blend like Mrs. Dash and place them in a large covered bowl in the fridge.   Grab 4 or 5 and eat ’em cold or heat them up.  They are super tasty dipped in mustard or a Sriracha ketchup.

**These are a race day and Ragnar staple since they are easily digestible carbohydrates.**

Cannellini Bean Hummus with Crudites
Puree 1 can of drained cannellini beans, 1 clove of garlic, 1T lemon juice, salt and pepper to taste.  Add a little water to thin as needed.   Cut up carrots, cauliflower florets, celery sticks, radishes and dip away.

Apple and Walnuts
Slice up some apples, sprinkle with cinnamon and grab a handful of walnuts.  Easy peasy.

Baked Tortilla Chips with Salsa
Take 2 corn tortillas and cut them into triangles.  Season them with chili seasoning and cumin and toss in a bowl.  Lay them on a Silpat mat and bake at 350 degrees for 7-9 minutes.   You can eat these with salsa or use them to scoop up your Cannellini Bean Hummus or guacamole.

Uncle Sam Original Wheat Berry Flake Cereal and Almond Milk with Berries
1/2 cup cereal, 1/4 cup almond milk and a sprinkling of berries.  It’s not only a great afternoon snack but also a fab dessert-replacement.

When eating healthy it’s really important to plan and have things readily available.  Here’s a quick primer to help you plan your week.

  • The hummus and potatoes can be made on a Sunday afternoon and be enjoyed all week.
  • Cut up your crudites, place them in a sealed container with a bit of water in the fridge and they will stay crisp and fresh for a few days.
  • The chips, however,  should be made and eaten the same day to preserve their crunchy goodness.
