Chicken Ole!

In an effort to break out of my cooking rut I created Chicken Ole!  It’s a healthy Mexican-inspired, dish that cooks quickly and tastes delicious!

 

 

Ingredients

1 lb boneless, skinless chicken tenders
1 jar medium salsa (if you are not a fan of spicy, use mild)
1/2 white onion, sliced
1 clove garlic, crushed
salt and pepper
Pam spray

Cooking Instructions

Season chicken with salt and pepper
Place a skillet on a medium-high burner
Coat skillet with Pam spray
Add garlic and onion – saute until soft
Add chicken, cook until browned on both sides
Add salsa and bring to a light boil
Reduce heat to low and let simmer for 20-25 minutes (or until chicken is cooked through and sauce has thickened slightly)
Serve over brown rice and add a green salad to round out the meal

Optional:  add diced avocado or a dollop of reduced fat sour cream.
