I have been plant-based since March 3, 2017, so out of necessity, I’ve compiled a list of resources for anyone who is plant-curious, interested in trying out some delicious recipes, or just wants to cut back on the amount of meat they eat or feed their family. Recipes I LOVE!
- Savory Oats – I eat this for breakfast every single day.
- Cheesy Chickpeas
- Tofu Crumbles – Use these in place of ground beef or ground turkey! If you have an air fryer, layer them in the pan and cook at 390 degrees for 15 minutes – stirring often.
- Easy Chickpea and Rice Soup
- Red Lentil Soup (Engine 2 Cookbook) This is one of my favorite soups!
- Vegan Vegetable Korma (Forks over Knives) This savory and fragrant dish, served over brown rice and a dash of Sriracha, is satisfying. I added cubed extra-firm tofu to make it a bit heartier. Chickpeas would also be a tasty addition if you’re avoiding soy.
