Cauliflower steaks are the bomb. These were seasoned with smoked paprika, chili powder, garlic powder, a pinch of salt, harissa spice blend and a few teaspoons of olive oil.
I topped this with cashew queso, chopped cilantro, chopped avocado and green onions over a bed of brown rice. It had a nice Tex-Mex twist.
Now, if your family isn’t sold on this kind of steak for dinner, don’t let that deter you, simply introduce it as a side dish. And if you invite me over for a pot-luck, expect to see this coming through the door!
