Meatless Monday – Irish White Bean and Cabbage Stew

My mother was English and claimed there wasn’t any Irish in our family. Yet my brother is Sean and I’m Keli (well, actually I was born Kelly). And until she passed in 2017, she religiously made Corned Beef and Cabbage every year. Time for some time on Ancestry.com perhaps? Where’s my “Hmmm? emoji” when I need it?

I personally never made the dish but there’s always some nostalgia when I see the packages of corned beef, with their spice packets next to heads of cabbage and potatoes in the grocery store every year.

So imagine my delight when I received an email from Forks over Knives (FOK, for those in the know) with a recipe for Irish White Bean and Cabbage Stew. I know, it’s not the same as CB&C, but it got me excited and so I got to chopping and made it. Visit www.forksoverknives.com for the recipe.

The verdict? A pot of homey goodness on a cold and rainy March day. (Note – Here’s a reminder to read the recipe before heading out to the store. The one above is missing the caraway seeds, barley, and oregano. Oops.)
